Instructions. Arrange a rack in the middle of the oven and heat to 450°F. Line a rimmed baking sheet with parchment paper. Place the gnocchi, peppers, tomatoes, onion, garlic, rosemary, salt, and a few generous grinds of black pepper in a large bowl. Drizzle with the oil and gently toss to combine. Sprinkle the fresh gnocchi with extra flour to avoid sticking. Place them on a large baking tray lined with baking paper. Brush the gnocchi with a little olive oil. Bake them in a preheated oven at 400°F (200°C) for 20 to 25 minutes or until golden. How to make gnocchi. Heat oven to 220C/200C fan/gas 8. Prick the potatoes all over with a fork and rub generously with salt. Sit the potatoes on a baking sheet and cook in the oven for 1 hr-1 hr 15 mins, until they feel tender when a knife is inserted. Leave to cool for 15 mins. Gently peel off the skins and discard.
